Pumpkin Pie Brownie
Thank Zod for autumn. I have 6 cans of pumpkin in my pantry that need to get outta’ there and make room for something else. I don’t even know where they came from, it’s possible that I just kept forgetting if I had any canned pumpkin and my collection grew and grew, or it could be the canned pumpkin fairy. And I can’t eat pumpkin in warm weather, it throws off my equilibrium.
Last night I made these Pumpkin Pie Brownies. It’s a brownie base with pumpkin in the batter and then pumpkin pie filling is poured on top and they bake together in perfect harmony. Obviously, these would be like gold at any Halloween event.
Recipe has been added, just click “more.”
Note: A 15 or 16 ounce can of pumpkin will equal the 2 cups of pumpkin needed for this recipe.
Ingredients:
For the brownie layer
4 ounce bittersweet chocolate, melted
1 cup canned or pureed pumpkin
3/4 cup sugar
1/4 cup canola oil
1 teaspoon vanilla extract
3/4 cup flour
1/4 cup dutch processed cocoa powder
1 tablespoon tapioca flour (or arrowroot or corn starch)
1/4 teaspoon baking soda
1/4 teaspoon salt
For the pumpkin pie layer
1 cup canned or pureed pumpkin
2 tablespoons tapioca flour (or use arrowroot or cornstarch)
1/2 cup non-dairy milk (I used soy)
1/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
pinch ground nutmeg
pinch ground allspice
To decorate:
A handful of chocolate chips
Directions:
Preheat oven to 350 F. Grease a 9 inch springform pan, or use a 9 inch square pan, preferably lined with parchment paper.
To make the brownie layer:
Melt the chocolate (I still don’t need to tell you how to melt chocolate, right?).
In a large mixing bowl mix together pumpkin, sugar, oil and vanilla. Sift in the flour, cocoa powder, tapioca, baking soda and salt and stir to combine, then mix in the melted chocolate.
To make the pumpkin layer:
Mix all ingredients in a large mixing bowl and stir until thoroughly combined.
To assemble:
Use a spatula to spread the brownie layer into the prepared baking pan, taking care to bring the batter to the edges of the pan. Pour the pumpkin layer over it, leaving a little room at the edges if you can. Bake for 30 minutes, until the pumpkin layer looks fairly firm (a little jiggling is okay) and has cracked at the edges a bit.
Let cool for 20 minutes and then transfer to the fridge to set for at least an hour and a half. Once set, decorate with chocolate chips and serve.
I would love this recipe! That looks delicious. I’ve been trying to convince my fellow engineering students that vegan food is good food, and I think some pumpkin pie brownies might just convert someone.

Isa- I’ve seen a lot of products that dont contain milk but it says on the package that it is made on machines that also make products that contain dairy. If I use it, will it still be considered vegan?

Tine – I consider those products to be vegan friendly. There are so many gray areas that 100% vegan is impossible (like our fruit being pollinated by bees, animals killed in grain agriculture, and our vegan food being processed right alongside food with dairy, to name a few). So avoid the major offenders and when the vegan revolution comes we won’t have to worry about milk chocolate chips sullying our vegan ones.

Isa-
Is it baking powder or soda? I used soda b/c I remembered from an episode of Arthur (as in the aardvark) that it’s soda for brownies and powder for cake, but I’m wonder a bit which you meant. Powder is listed in the ingredients and soda in the method. I tested these about an hour ago for a party this saturday, and they’re perfect!!

question: i made these, and they were oh so delicious. however… would it really work in a 9″ round pan like it would in a 9″ square pan? shouldn’t it be 8″? i’m a math nerd. please forgive me.
i made them in an 8″ square pan and they are gooey and yummy and sitting happily in my tummy.

Yumm. I had an adorable buttercup squash telling me it wanted to marry some chocolate. So I happily obliged. I roasted the squash til soft and let it cool. I had been baking all morning so I was getting tired of all that precise measuring so I sorta winged it. But it turned out oh so yummy. I baked it for an additional 10 minutes and it’s perfect. I brownie base will definitely be used on it’s own in the future too.

Do you still need to use Dutch-processed cocoa if it’s baking soda instead of baking powder? I thought that Dutched cocoa was for use in things with baking powder.

Oh man… on the up-side, these double beautifully. On the down side, the up side of my double batch fell down and hit the floor and I couldn’t serve any of it. On another note, after making these twice to get them just right, I can report that tapioca works about a million, billion times better than corn starch.

Alright, although it is not autumn, I decided to give these a try anyways since I always have lots of pumpkin laying around. When I tasted the batter I was disappointed, but for no reason, once chilled, it was most delectable, and very gourmet in taste and appearance, even though it was so incredibly simple to make. Perhaps the name should be changed to chocolate pumpkin torte, because we ate it in slices not squares. I will definitely make this again!

Baking & Pastry career insight needed…
hi,
I’m a propsective student but want to gain more insight. these culinary schools are VERY expensive for coursework lasting only half a year. I’m told by nearly everyone in the industry that it’s rotten to the core, and salaries are dirt cheap. lastly, I’m told that my current job in a bakery can be attained for the same hourly wage regardless if I attended school or not.

Hi, I am in Australia and we don’t have access to “dutch processed cocoa” here, just regular cocoa. Is there a way I can subsitute? Also, I have loads of fresh pumpkin, if I boil/steam or bake them will that be equivalent to the canned stuff? (i have no idea what is in canned pumpkin, if it contains just straight pumpkin or has added spices I need to account for.).

I made a couple healthy substitutes: Applesauce for Oil, Unsweetened Chocolate for Semi-Sweet, Organic Sugar and Stevia for Regular Sugar and Soy Protein Isolate and Whole Wheat Flour for Flour. They still tasted FABULOUS!

I am really perplexed by all the positive comments. I’m really angry I wasted so many ingredients and energy to heat the oven. I wish people who didn’t like it would have been more vocal, to save me the $. I tried this because Weight Watchers has a similar recipe (pumpkin + chocolate cake mix) and everyone raves about it. This is dish is very very very bad. I had to throw it out and brush my teeth to get the flavor and texture out of my mouth. Perhaps if you are trying to achieve a lower-fat brownie, substitute applesauce for the egg and oil in a regular brownie recipe. The pumpkin’s strong flavor competes with the chocolate, stays very fibrous, and there is not enough leavening in this recipe. Also, the cook time is way too short; I cooked it 25% longer than the recipe called for and it’s still a pile of goo.

Not bad! I made them gluten free also and they turned out pretty good. My pumpkin topping was a little more moist than I liked but that didn’t stop me from eating half the pan (out of guilt i stopped to save the other half for hubby).

Hello! I made this recipe and it did not turn out very good. I had such high hopes! But the pumpkin layer was too wet and stayed mushy. It did not turn into pumpkin pie consistency. Also, the brownies weren’t very chocolatey. Any suggestions or tips??

I made these to take to a Halloween party but sadly I don’t think they’re going to last that long! I didn’t use dutched cocoa, used unsweetened chocolate instead of bittersweet (which wasn’t vegan), and used corn starch. My only complaint is that they were TOO chocolatey (but I don’t like chocolate) … they were gooey after coming out of the oven but once they set they were fine, maybe a bit “cakey” when I like my brownies “cookie-y” but my whole non-vegan family just loved them. This was the first thing I’ve ever baked as a vegan and it was a TOTAL hit.

These were delicious! Made them for the non-vegan fam @ Thanksgiving today. I cooked them about five extra minutes, think they could have perhaps used another ten, as they got reallllllly gooey when warm. But, once chilled again, they were amazing in taste and texture, kind of like a fudge with a pumpkin topping. Anyone who had trouble with them, just keep them cold until the absolute last moment before eating.

Your book rocks! I looooovveeee it! It’s so hard to find vegan baking book in my country (Indonesia), so I had to buy it from the internet. But it is really worthwile! My little daughter is allergic to egg and milk, and your book is my hero!
Oh, yes, I have a question with this recipe.. Can I change chocolate with carob powder? I prefer carob rather than chocolate for my daughter…

My first time making these because my boyfriend loves pumpkin and ate it everyday for years. They’re cooling, just out of the oven now. I can’t wait to sprinkle them with chocolate chips to make it pretty! The best thing I love about vegan brownies is that when they turn out gooey – that’s perfectly fine!

Taste test time!
I used cornstarch and was only missing all-spice. Used regular, dark cocoa powder. On first bite – quite a different texture and taste sensation. The brownie is very dense and almost cakey yet brownie batter texture at the same time. The chocolate mostly overpowered the pumpkin unless you ate it upside down. I really like the combination of chocolate and the pumpkin pie spices. Maybe sometime I’ll add those to just the brownies.
Very sumptuous, voluptuous and filling. I hope my bf likes them when he gets a plateful tomorrow! My mom is also taking a few to work to share with her coworkers. Taking over the world – one vegan dessert at a time! ^_~

Just had a slice of this pie before it was chilled and it tasted lovely! I think it would go very well with cream or vanilla ice cream.(I am not vegan) i added more cinnamon as just love the taste. Just purchased Vegan Cupcakes Take Over The World, can’t wait to start trying them out! what an amazing little book!

Made this for my Halloween party. It was such a hit! I ended up really mad, though, because I made two and while I was away my mom fed one to my brother, so I only ended up getting one slice. D: I’ll definitely make it again.

I’m super disappointed. I’m making these right now and my timer for 30 minutes went off 15 minutes ago but the pumpkin layer is still liquid! I used arrowroot, but the recipe says that sub is fine! Any suggestions as to what I did wrong??

I am eating the last one right now as I write this! heavenly, absolutely heavenly. It was only OK when I ate it after an hour and a half of it being in the fridge. This is def a brownie to sit in the fridge overnight. The next day, POOF, you have the best brownies ever. Anyone who thinks there is no taste needs to learn to appreciate the simple taste of pumpkin. I love the taste! And my boyfriend, who is not vegan and VERY picky about sweets, loves it. Thanks so much for this recipe! It’s gonna be a staple in my kitchen for many years!

This recipe is amazing! I did a few alterations to suit my own needs and it turned out great!
I only melted 2 ounces of chocolate and I cooked it for about 50 minutes.
Very delicious. I am making them again for my family for Thanksgiving.

This recipe looks fantastic. A must have for all pumpkin lovers of chocolate. I am looking forward to trying it! I have a pumpkin that goes into the oven tomorrow just for this dessert!
I think I will sub applesauce for the oil. That seems to work in most of my other recipes.
Thanks for the tip, Claire Laurie, I may bake it a bit longer. I have a Vegan Pumpkin Pie recipe on my site that bakes for 60 minutes. But, without eggs, it doesn’t seem to be much of a serious issue. The refrigeration part is important to help it set and serve pleasantly.

i hate to be a downer but this recipe is not very good. the pumpkin part smells and tastes like play-doh. ; ( and the brownie part is compromised by the addition of pumpkin. i would recommend making the brownie part like a time tested and true brownie (vegan i guess for this site) and the pumpkin pie part following the recipe on a can of Libby’s pumpkin which, believe it or not, is quite a good recipe. in fact most pumpkin pie recipes are identical as there are standard ingredients. or better still don’t mix chocolate and pumpkin.
