Chewy Chocolate Chocolate Chip Cookies

Chewy Chocolate Chocolate Chip Cookies

These are brownie-like and chewy. Be careful not to overbake them, they may seem like they aren't done after 10 minutes but they are! See the variations for Chewy Chocolate Cherry Cookies and Chocolate Hazelnut (or almond or walnut or whatever) Cookies at the bottom of the directions.

Update: Ryan at Vegblog mentioned that you might want to use a hand blender to mix these instead of your hands. What can I say? We're punk we don't need no hand-mixers, but if you want to use one before adding the chips, then go for it (but you will lose punk points).
Equipment:
Baking Sheet, Blender, 2 large bowls, mixing spatula, cookie sheets

Ingredients
3/4 cup canola oil
2 cups sugar
2 teaspoons vanilla

1 tablespoon + 1 teaspoon whole flax seeds
1/2 cup soymilk

2 cups all purp flour
3/4 cup dutch processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips


Directions
Preheat oven to 350 F.

Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.

In a large bowl sift together flour, cocoa, baking soda and salt.

In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.

Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.

Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.

Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

Variations:
For chocolate chocolate chip cherry cookies, replace 1 teaspoon of the vanilla with almond extract, and replace 1/2 the chocolate chips with dried cherries.

For chocolate nut cookies, replace 1 teaspoon of the vanilla with a nut extract (almond, walnut, what have you) and replace the chocolate chips with 1 1/2 cups chopped nuts (hazelnuts, almonds or walnuts all are good).

yummy! i used unsweetened (not 'dutched?') cocoa powder, and they turned out pretty well. adding the cherries make them even better. yum yum yum.

SO chewy and so good! I used 1 1/2 teaspoons vanilla and 1/2 teaspoon almond extract, like it said to for the cherry ones, and they were the bomb.

Damn, these are good! Some of the finest cookies ever. I used half turbinado sugar and half organic white sugar, as well as regular cocoa powder.

You have to make these! They are SO SO SOOOO good! And use the little bit of almond extract if you have it. SOOOOOOO good. I would say best vegan cookies ever.

These cookies rocked my world. Very chewy, and extra decadent if you eat them warm! I made them with dried cherries, no almond extract, and veggie oil (I had no canola), and they turned out great. Probably the best cookies, vegan or otherwise, that I have ever had. Mmmmmm....cookies.

Oh my. These are the bestest cookies EVER. I didn't have any flax seeds so I used tofu instead. I also usually don't like my cookies super-sweet so I halved the amount of sugar the recipe called for and they still turned out fabulous.

Okay wow, I made these cookies for my friends birthday and I'm not vegan but I still think these are amazing. They were super easy to make, the flax seed egg substitute was really easy to make. I just bought flax meal instead. I made the cherry/almond cookies and they are super tasty, my mom likes them. My friend made the chocolate ones and she said they are good but the recipe probably uses too much chocolate chips. I LOVE IT.

Great Recipe! I love to bake and have only recently become a vegetarian. I used tofu/starch mixture in place of flax seeds (didn't have any). I tried the suggested 1 tsp vanilla, 1 tsp almond (delicious). I also added 1/2c coconut and 1/2 cup nuts. This batch was fudge-like so I left it in the oven for 15 min. It is truly a great recipe. Thank you sooooo much :) It was a hit with my sons' playgroup.

I just tried these today and they are FANTASTIC! Chewy is definitely the right word to describe these, and they're soo good warm. This is a vegan chocoholic's dreeeeeaaam :D

these were really yummy! but on the ingredients list, it says baking soda, and on the directions it says baking powder :/ it might confuse others.
