400-500g Button mushrooms ( de-stalked, if you have time make fine horizontal and vertical grooves on the flat side of the head)
1/2 cup whole garlic cloves peeled
5-6 Hot red chillies finely shopped ( Bird's eye chillies)
3/4 cup coriander finely chopped
1 1/2 tsp sugar (according to taste)
2 tsp apple cider vinegar (according to taste)
1 tbsp dark soy ( according to taste)
Salt to taste
2 tbsp sesame oil ( can use oilve oil too)
1 1/2 tsp roasted sesame seeds
Serves 2
Time : 10-12 mins
1. Set a saucepan with a large flat bootm on a high flame.(helps to roast the mushrooms well)
2. Add the sesame oil and wait for it to smoke.
3. Reduce heat to Med.
4. Add sugar and melt.
5. Add garlic and fry till light brown.
6 Add chillies and roast.
7. Place mushroom heads in the pan on the, on the flat side.
8. Roast the mushrooms until light brown.
9. Add Soy, vinegar, coriander and salt and roast for 5 mins until all water evapourates. Stir until mushrooms are coated evenly with the sticky soy mixture.
10. Sprinkle with roasted sesame seeds and serve hot.
Caution : This is spicy
Do not burn the mushrooms or garlic.Keep stirring the pan.
