Chocolate Cake

The blog doesn't mention cooking method though but it's probably just to mix dry ingredients with wet and into the oven immediately.


The BEST chocolate cake ever...that happens to be VEGAN. I kid you not!

First off, I will admit, I have never been a cake person. For the first 20 years of my life (I'm 26 now), I rarely touched my birthday cake. I'm not sure if my palate didn't like boxed/store-bought cakes or what, but only when I started baking them myself did I begin to take a liking to the moist airy treat. Also, I am an omnivore, with a lot of vegetarian and vegan friends, so imagine my excitement when I perfected the best chocolate cake I have ever tasted, AND made it vegan in the process. Step 1Ingredients

Cake Ingredients

1 1/4 cups flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp distilled white or apple cider vinegar

Chocolate Glaze

1/2 cup sugar
4 tbsp margarine
2 tbsp soy milk
2 tbsp unsweetened cocoa powder
2 tsp vanilla extract

Note: if you don't care to make it vegan, or don't have soy milk or margarine, you can use butter in place of the margarine, and whatever milk you prefer in place of the soy.

Amaaaaaaazing cake .I made this cake for my partner and I and he was sooooo amazed when I told him of the ingredients and that it was Vegan .I used organic flour and sugar and Ghirardelli natural unsweetened cocoa.

Not too shabby. I've been trying out veganism for about a month now and was craving a treat like chocolate cake.
I'm a die-hard baker, but new to the vegan methods (vinegar instead of eggs and such). So-- I followed the exact recipe instead of just getting ideas from the recipe like I usually do... with one exception. I just couldn't bring myself to mix it in the pan I was going to bake it in. Call me old-fashioned.
Now, I don't know if I'd call this the BEST ever, but by far the best vegan dessert I've had thus far.
The flavor was great, closest to Devil's Food, I'd say. The consistency was slightly dense and quite moist while still full of enough bubbles to remain spongy and soft. I really enjoyed the boiled "glaze", which for me turned into more of a fudge-like consistency when cooled.
I could see doing some really fun stuff with this cake... and I'll make it again (even when my vegan experiment is over!)

This recipe sounds just like the "crazy mixed up chocolate cake" my grandma-in-law used to make. It has always been a favorite in our family. I mix it with my mixer and pour it into pans. That way I can use different shaped pans. I've even used it in a wedding cake; I just quadrupled the recipe.

It's an old depression era cake recipe that still works today and always will.

I often make chocolate cake from boxed mix, but when T-minus 1 hour until cake time is just too long, I pull out this recipe and make it in the microwave. Seriously! Put 1 cup of this mix in a tupperware, cover with two wet paper towels, and cook for 6 minutes on 40%. Then roll the paper towels back one inch from two edges and cook on 40% for another 6 minutes. It comes out moist like a brownie!

This cake is fabulous. I've made it twice for birthdays and potlucks.
Two suggestions: 1, is to cut down on the sugar for both the glaze and the cake. I used half of what is calls for and I find it a lot better. No need for so much sugar in our diets anyway. 2, I used spelt flower to cut down on the gluten content and it worked perfectly. Equally as fluffy and delicious.

My daughter has Celiac along with the food allergies. Do you think that this cake would work with a 'baking' flour mix? I use it in all my cookie recipes and they turn out great. The binder used is additional guar gum.

This cake is fantastic. Worked just as you said, and was just what I was looking for. I topped it with chopped pecans, unsweetened coconut and vegan chocolate chips. Yummy!

Today was my boyfriend´s birthday and I baked him this cake.. he couldn´t believe it was vegan (we are not vegans, but we try to take care of what we eat)... it is not easy here in Peru with so many delicious things! The only thing is that it resulted a bit flat... is there a way of making it grow a bit more? I olso think of making this same cake but with some fruit... maybe banana... or Lucuma...

are you sure it's not because of the elevation? Peru is pretty high and it's hard to cook things well in high altitudes.

This. This is my "go-to" chocolate cake, even if I'm not baking for vegans. So moist, chocolatey, and insanely delicious. I'm a skinny little thing, but I would stuff an entire cake in my face if I weren't so vain about my weight.

We all loved it and I will HAVE to double the recipe next time (this coming Sunday I have some Hindu vegetarians coming) as it was barely enough for the four of us! yeah, i did everything, and i tried a similar recipe that had the measurements just a little different but that didn't work either, maybe it's my ingredients or oven. i'm using organic sugar that's a bit coarser and doesn't really dissolve well and a brown rice flower but the other recipe says i can use that kind of flower.

Rice flour will not work. Without any eggs, the gluten that develops from mixing the flour with wet ingredients is the only binder that will hold this cake together. Rice flour has no gluten, thus the cake has nothing to hold it together and it falls apart as you note. If you use a good all purpose flour, the recipe should work.

I recently went from vegetarian to vegan (the last documentary I saw finally pushed me over the edge)...my two kids are vegan also but my husband is not. I'm always looking for yummy things we can all eat and since we all have back-to-back birthdays coming up I am really excited to try this out! I have made this cake many times for potlucks, etc. It doubles well and after it's baked and come to room temp. poke holes in it and pour amaretto in the holes. Then you can also make a tofutti cream cheese frosting and I use a coffee grinder to chop Trader Joe's candied pecans to sprinkle on top. Trust me you get rave reviews, and of course the usual, "Are you sure this is vegan?

Just did this very thing, doubled the recipe and it came out perfect. Baked in two round tins. Cooled and iced, then ATE!
